Apple, Brie & Rosemary Puff Pastry Tarts
These Apple, Brie, and Rosemary Puff Pastry Bites are an easy and delicious sweet-and-savory appetizer for fall. Sweet apple butter, creamy brie, crisp apples, and fragrant rosemary are the perfect autumn flavor combination on top of flaky puff pastry.

Makes 9 bites
Ingredients:
1 puff pastry sheet, refrigerated and thawed until flexible but still cold
½ cup apple butter
1/4 cup walnuts, chopped
2 tbsp rosemary, finely minced
1 wedge of brie cheese, sliced into bite-sized pieces
1 apple, thinly sliced
1 egg
1 tbsp granulated sugar
2 tbsp fresh lemon juice (optional–see note**)
Honey and small rosemary sprigs for garnish
To make:
Preheat oven to 400 F. Sprinkle flour onto a surface and roll out the puff pastry sheet. Use a knife to cut the pastry into 9 even pieces. Line a baking sheet with parchment paper and transfer the pieces to the baking sheet.
Spread the apple butter evenly over the puff pastry and sprinkle with chopped walnuts and minced rosemary. Top each with a piece of brie. Fold in the corners, then the sides of the puff pastry to create a rectangle shape.
Top each piece with a few apple slices. In a small bowl, beat the egg to create an egg wash. Use a pastry brush to brush the egg wash onto the sides of the pastry. Sprinkle the sugar over the pastries.
Bake the puff pastry for 10-15 minutes until the cheese is melted and the edges are lightly golden brown. Enjoy!
** Note: To make this recipe in advance, prepare according to directions and brush the egg wash onto the pastry. To prevent browning, drizzle fresh lemon juice over the apple slices. Cover the pan and refrigerate for up to 3 days until ready to use. When ready to bake, remove the pastries from the fridge and bake right away (you don’t have to let them thaw) according to the recipe directions.
