Asparagus Tart with Herbed Cheese and Microgreens
This whimsical savory galette is the perfect appetizer or meal for late spring or early summer. Fresh asparagus and a simple herbed cream cheese filling are the perfect flavor combo. Made with just a few ingredients, it’s super quick and easy to make—especially if you use a store-bought pie crust like I do!
Asparagus GALETTE with Herbed Cheese and Microgreens
Makes one tart
Ingredients:
For the filling:
6 oz cream cheese, softened at room temperature
1 cup minced fresh herbs of your choice (I used parsley, chives, and dill)
2 tbsp fresh lemon juice
1 tsp garlic powder
For the tart:
1 pie crust, store-bought or homemade, thawed to room temperature
1 bunch asparagus, washed with ends removed
1 tbsp olive oil
1 egg
Salt and pepper to taste
1 cup microgreens and edible flowers for garnish (optional)
To make:
Preheat the oven to 400 F and line a baking sheet with parchment paper.
To make the filling, add the cream cheese, herbs, lemon juice, and garlic powder to a medium bowl and mix until completely combined.
Roll the pie crust out onto the baking sheet, then spread the cream cheese mixture to form a circle in the center.
Arrange the asparagus into a circle on the top of the tart and fold the edges of the pie crust to form a galette shape. Drizzle with olive oil and season with salt and pepper.
In a small bowl, whisk together the egg and a tablespoon of water to form an egg wash. Brush the egg wash onto the crust of the galette.
Bake for 30 minutes or until the crust is lightly golden brown and the center is cooked completely. Remove from the oven and let cool for about 10 minutes.
Before serving, top with microgreens and edible flowers (if desired) and drizzle with olive oil. Enjoy!
