Blueberry Lavender Breakfast Popsicles

Meet my new favorite breakfast!

These Blueberry Lavender Breakfast Popsicles are just as refreshing and nourishing as a smoothie, but SO much more fun to eat. Even though they taste like a dessert, they’re actually a really wholesome breakfast option, with honey as the sweetener (and no added sugar). Delicate lavender, lemon, and blueberry are the perfect combination with tart Greek yogurt, and the beautiful ombre color speaks for itself.

Blueberry Lavender Breakfast Popsicles 

Makes 6 popsicles 

Ingredients

For the lavender syrup:

  • 1/4 cup raw honey

  • 1/4 cup water

  • 1 tbsp dried lavender buds, crushed

  • 2 tbsp fresh lemon juice 


Other ingredients: 

  • 2 cups full fat greek yogurt

  • 1 tbsp vanilla extract

  • 1 tsp lemon zest

  • 1 cup frozen blueberries 

To make: 

  1. Prep the lavender syrup. Combine honey, water, and lavender over medium low heat and bring to a gentle simmer. Turn off the heat and let cool completely, then stir in the lemon juice. Strain through a mesh sieve and set aside.

  2. In a bowl, combine greek yogurt, vanilla, and lemon zest. Stir half of the lavender syrup into the mixture. 

  3. In a blender, combine the blueberries and remaining lavender syrup. Add a large scoop (about 1/2 cup) of the yogurt mixture, and blend thoroughly. 

  4. Divide the blueberry mixture evenly among the popsicle molds. Then, top off each popsicle with the yogurt mixture. Insert a popsicle stick into each and gently stir to create an ombre effect. 

  5. Let freeze at least 4 hours. When you’re ready to eat, run each mold under warm water for a few seconds to help loosen the popsicle. Enjoy!
