Blueberry Mint Iced Herbal Tea

Blueberry Mint Iced Herbal Tea
Makes about 4 cups
Ingredients:
For the blueberry syrup:
1 cup of blueberries, fresh or frozen, rinsed and drained
1/2 cup of water
¼ cup honey or maple syrup
For the herbal tea:
4 tbsp dried spearmint tea leaves (or about ½ cup fresh mint leaves)
4 cups filtered water
Fresh mint for garnish
To make:
To a saucepan over medium heat, add the blueberries, water, and maple syrup, stirring frequently until the mixture comes to a gentle boil. Boil for 2 minutes, using a fork to gently mash the berries. Then strain the blueberry berry mixture through a mesh sieve. Discard the solids and set the blueberry syrup aside.
Add 4 cups of water to the same saucepan and bring to a boil. Turn off the heat and stir in the dried mint leaves. Cover and let steep for 5 minutes. Then, use the mesh sieve to strain the tea into a large pitcher.
Stir in the blueberry syrup and let cool completely.
Serve over ice with a spring of mint.
