Celery Salad with Radishes and Chickpeas

Crisp celery, peppery radishes, and crunchy chickpeas make the perfect trio in this delicious celery salad. Equally satisfying and refreshing, this recipe is perfect on its own or as a healthy side dish. 

Celery Salad with Radishes and Chickpeas

Ingredients

For the vinaigrette: 

  • 2 tbsp red wine vinegar

  • 5 tbsp olive oil

  • 2 tsp Dijon mustard  

  • 1/2 tsp oregano 

  • pinch of salt and pepper 

For the chickpeas:

  • 1 can of chickpeas, drained and rinsed well

  • 2 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp Italian seasoning

  • salt and pepper to taste

Other ingredients:

  • 1 head of celery

  • 1 bunch of radishes

  • 1 cipollini (or about 1/4 cup red onion)

  • 1/4 cup basil, finely chopped

  • 1/4 cup parsley, finely chopped 

  • 1/4 cup parmesan cheese, shredded or grated 

  • salt and pepper to taste 

To make:

  1. Make the vinaigrette. In a small jar, combine all vinaigrette ingredients and shake well to emulsify. Set aside. 

  2. Pat the drained chickpeas with a towel to remove excess water. In a pan over medium heat, add the olive oil, chickpeas, garlic powder, Italian seasoning, and salt and pepper. Cook the chickpeas, stirring frequently, until crispy and golden brown. Remove from the heat and let cool.

  3. Using a mandoline slicer, cut the celery, radishes, and cippolini into very thin slices. Place in a large bowl and lightly season with salt. 

  4. Mix half of the vinaigrette into the chopped vegetables. Add the basil, parsley, and parmesan, mixing well to combine. 

  5. Transfer the salad into a serving bowl if desired, then drizzle with the remaining dressing and sprinkle the chickpeas on top. Enjoy!
