Chamomile Strawberry Pink Lemonade with Flower Ice Cubes

This colorful, refreshing Chamomile Strawberry Pink Lemonade is the perfect drink for spring or summer. Chamomile simple syrup, strawberry puree, and fresh lemon juice complement each other perfectly, and optional (but adorable) flower ice cubes make the presentation so pretty.

Chamomile Strawberry Lemonade

Makes about 6 cups

Ingredients:

For the simple syrup:

  • 2 cups filtered water

  • 1 cup granulated sugar

  • 1/4 cup chamomile tea (or 6 chamomile tea bags)

For the lemonade:

  • 2 cups fresh strawberries, hulled

  • 1 1/2 cups fresh lemon juice

  • 2 1/2 cups cold filtered water

For the edible flower ice cubes (optional):

  • Edible flowers of your choice (I used pansies and chamomile)

  • Filtered water

To make:

  1. To make the edible flower ice cubes, fill two ice cube trays with filtered water and place an edible flower on the top of each cube. Freeze until solid.

  2. To make the simple syrup, bring 2 cups of water to a boil and turn off the heat. Add the sugar and stir until dissolved. Add the chamomile tea and steep for 15 minutes. Remove the tea bags (or strain out the chamomile if using loose tea) and set aside to cool.

  3. Make the strawberry puree. To a blender, add the strawberries and a little splash of water if needed to help blend. Blend into a smooth puree and set aside.

  4. Juice 1 1/2 cups of lemon juice, then strain the lemon juice into a large jar or pitcher. Next, strain the strawberry puree into the pitcher. Add the chamomile simple syrup and mix well to combine. Cover the jar and place the mixture in the fridge for a few hours to chill.

  5. To a pitcher, add the flower ice cubes (if using) and the lemonade concentrate mixture. Add 2 1/2 cups cold filtered water and stir well to combine. Enjoy right away.
