Forest Moss Cake
Don’t be fooled by its mossy appearance—this cake is completely edible! Moss cakes are SO fun to make and share at parties because the edible green crumb layer looks so much like real moss, making it the perfect canvas for decorating with berries, flowers and forest-themed ingredients of your choice.
I also love moss cakes because they are incredibly simple to make. Begin by making a green cake of your choice, such as a matcha cake (my personal favorite), spinach cake, or even vanilla cake with a bit of natural green food dye. You can either set aside some of the batter to bake separately, or cut off the domes on the top of the cake to use for the crumb layer.
To make the “moss”, simply crumble the extra green cake into a bowl. Frost the cake as you normally would, then gently pat the green crumble all over the outside of the cake. That’s all there is to it! Then, you can serve as-is or decorate however you wish.
Edible Forest Moss Cake
Makes 1 cake
Ingredients:
Ingredients for one green cake (such as matcha, spinach, or vanilla with natural green food dye)
One batch of buttercream frosting
Berries, flowers, and herbs (such as thyme and sage), or any other decorations of your choice for garnish
To make:
Prepare the batter of a green cake of your choice. You can either set aside about 1/5 of the batter to bake separately, or bake the cakes as you normally would and cut off the domes on top, to use for your moss layer.
Bake the cake according to instructions. Let cool completely.
If you’re following the dome method, cut the domes off the tops of the cakes, and if you’re using the separate cake method, remove the extra cake for the crumb layer from the pan. Finely crumble the extra cake into a bowl for the moss layer.
Frost the cake as you normally would. Then, sprinkle and gently pat the green crumb layer all over the outside of the cake. Your serving platter will get a bit messy in this process, but I actually like how it looks—I think it adds to the natural, mossy look of the cake! However if it bothers you, feel free to gently wipe away the crumbs around the bottom of your cake.
You can either serve the cake as-is, or decorate with berries, flowers, herbs, or any other garnish of your choice.
