Hummus & Veggie Tea Sandwiches

If you’re looking for a delicious vegan option for tea party sandwiches, look no further than these colorful Beet Hummus and Veggie Sandwiches. These sandwiches are a wonderful option for a summer picnic, an elegant afternoon tea party, or a quick and tasty snack.

To make the sandwiches, simply spread Roasted Beet Hummus onto two slices of bread of your choice. Top with sliced cucumbers, watermelon radishes (or regular radishes), micro greens, shredded carrots, and chives. Cut into bite-sized pieces, and enjoy!

Hummus and Veggie Tea Sandwiches

Serves 4-6

Ingredients:

  • Roasted Beet Hummus (recipe here)

  • 1 English or Persian cucumber, thinly sliced

  • 1 watermelon radish, thinly sliced

  • 2-3 carrots, shredded

  • 1 cup micro greens

  • 1/4 cup minced chives

To make:

  1. Spread the beet hummus onto two slices of bread in a thick, even layer.

  2. Top with a thin layer of each of the vegetables, then top with another slice of bread.

  3. Cut into bite-sized pieces and repeat. Enjoy!!
