Mini Charcuterie Snack Board (Cheese Board for One)
September has always been a month of change for me. When I was young, it was the annual back-to-school transition month, the month when all the trees would change color.
But as an adult, most of my big life changes have coincidentally happened in September—it was the month I moved back home to New Jersey from Portland last year, my birthday month, the month I started my blog. And this year, we started off September by moving into our new apartment!
We’re renting a small beach cottage (it’s a winter rental), and we are so happy with the location and the little house itself. For the first time in my life, I have a beautiful kitchen with enough storage space for all of my cooking stuff. I couldn’t be happier! And Alex is overjoyed to have his own office space where he can work and record music.
As wonderful as this transition is, it’s been a big adjustment, and I had to stop working on my blog for a couple of weeks while we moved and settled in. Now that we’ve been here for a full week, I’m so happy to be getting back in the swing of things.
So, when brainstorming what to make for my first recipe in my new apartment, I knew I wanted to make something designed for transitional times like these—something that’s quick and easy to make, but still feels special and satisfying. Of course, a cheese board instantly came to mind! :) But not just any cheese board—this is a delicious mini snack board for one.
Great as an afternoon treat or after-school snack, it’s made with a variety of cheeses, fresh fruit, crunchy crackers, and marcona almonds. The BEST treat for these busy September days!

Mini Charcuterie Snack Board (Cheese Board for One)
Makes one mini board
Ingredients:
Cheese:
Mini brie cheese wheels (such as Trader Joes Mini Brie Bites)
Manchego Cheese
Cheddar cheese (such as Trader Joes Unexpected Cheddar)
Fruit:
Thinly sliced apples (such as macintosh)
Grapes (I used Thomcord)
Fresh figs, sliced in half
Other Ingredients:
Rustic crackers (I used Trader Joes Pumpkin Cranberry Crisps)
Multigrain crackers
Almonds (I used Trader Joes Rosemary Marcona Almonds)
Fresh rosemary sprigs for garnish
To make:
Prep the cheeses. Cut the bottom of the rind off the manchego cheese wedge, then continue cutting, making thin slices (so that the rind is only out the outer edge). Use a fork or cheese fork to break chunks of cheese off the cheddar.
Arrange the brie, cheddar, and manchego on the board.
Place the apples and a small bunch of grapes on the board, along with the crackers.
Use the almonds to fill in any empty spaces on the board. Garnish with rosemary. Enjoy!!
