Orange and Pomegranate Oatmeal

This comforting Orange and Pomegranate Oatmeal is the perfect cozy breakfast for cold winter mornings. This recipe is an updated version of my original Citrus and Pomegranate Oatmeal recipe that I published a few years ago! In this simplified version, I use rolled oats (instead of steel cut oats) for an even faster cooking time.

Orange and Pomegranate oatmeal

Makes 1 serving

Ingredients:

  • 2 cups oat milk or milk of your choice

  • 1 cup rolled oats

  • 1/4 tsp kosher salt

  • 1 tsp vanilla

  • 1/4 tsp cinnamon, plus more for garnish

  • 1/4 cup vanilla coconut yogurt

  • 1 orange, peeled and sliced

  • 1/4 cup pomegranate seeds

  • 1/4 cup pepitas (pumpkin seeds)

To make:

  1. Bring the oat milk to a low boil in a saucepan over medium heat. Once boiling, add the oats, salt, vanilla, and cinnamon. Stir to combine and reduce to a simmer, stirring frequently, until the liquid is absorbed.

  2. Scoop the oatmeal into a bowl and top with coconut yogurt, orange slices, pomegranate seeds, pepitas, and more cinnamon for garnish. Enjoy!
