Rainbow Collard Wraps

I’m such a fan of collard wraps for any sort of fantasy or forest-themed picnic because they look so fun and whimsical! These Rainbow Collard Wraps are filled with colorful veggies and are delicious as a snack or side at picnics.

Rainbow Collard Wraps

Makes 1 wrap

Ingredients:

  • 1 collard leaf

  • 2-3 tablespoons of Beet Hummus or hummus of your choice

  • Shredded carrots

  • Shredded red cabbage

  • Sliced red, yellow, and orange bell peppers

  • Cucumbers, cut into sticks

  • Microgreens and herbs (such as dill and chives)

To make:

  1. Use a knife to remove the long end of the stem from the collard leaf. On the back of the leaf, use your knife to carefully shave down the thick part of the stem. This is going to make it much easier to roll up and eat!

  2. Spread the beet hummus onto the back of the wrap, then top with shredded carrots, red cabbage, cucumbers, sliced bell peppers, microgreens, and herbs. Fold in the sides and carefully roll up the collard wrap like a burrito. Enjoy!
