Rainbow Veggie Board with Yogurt Herb Dip

This Rainbow Veggie Board with Yogurt Herb Dip is always a favorite whenever I make it for friends. The dip is inspired by green goddess dressing, so it’s creamy but also very fresh and flavorful! We have so much amazing produce in season this time of year where I live, so I was able to find a rainbow of different vegetables for the platter—but you can of course use any veggies you like for this recipe! I find that just about every vegetable goes well with this delicious yogurt herb dip :)

Rainbow Veggie Board with Yogurt Herb Dip

Serves 4-6

Ingredients:

For the dip: 

  • 2 cups packed fresh herbs (I used basil, cilantro, parsley, and dill), chopped

  • 2 cups whole milk greek yogurt

  • 2 tbsp fresh lemon juice

  • 1 tbsp extra virgin olive oil  

  • 1 garlic clove

  • ½ tsp sea salt

  • 1 tsp olive oil 

  • Hot sauce to taste (optional)


For the board:

  • Tomatoes

  • Red and yellow bell pepper

  • Radishes

  • Carrots

  • Endives

  • Cucumbers

  • Snap peas

  • Purple cauliflower

To make:

  1. Add all of the ingredients for the dip to a food processor and blend until somewhat smooth and completely combined. Transfer the dip to an airtight jar and refrigerate for at least two hours. This will help the dip thicken.

  2. Prep any veggies that need to be chopped. To make the board, scoop some of the dip into a bowl and arrange the veggies into a rainbow around the dip. Enjoy!
