Spiced Pumpkin Seed Butter
This creamy, flavorful Spiced Pumpkin Seed Butter tastes like autumn in a jar. Rich, fragrant Styrian Pumpkin Seeds are blended with cozy fall spices and a touch of maple syrup to create a simple yet delicious seed butter. Add it to smoothies and salad dressings, drizzle it over oatmeal, or enjoy it on toast with fresh fruit all season long!
If you’ve never tried Styrian Pumpkin Seeds, I can’t recommend them enough!! They have a wonderful depth of flavor and are rich in natural oils and nutrients like protein and iron. I recommend using them for this recipe because they pair perfectly with the blend of autumnal spices, and their high oil content makes them excellent for blending into a seed butter. However, if they aren’t accessible to you, please feel free to substitute them for pepitas (North American pumpkin seeds).

Spiced Pumpkin Seed Butter
Ingredients:
1 cup Lark Ellen Farm Styrian Pumpkin Seeds or pepitas (North American pumpkin seeds)
1-2 tsp melted coconut oil (if needed)
1/2 tsp cinnamon
Pinch of nutmeg
Pinch of ginger
Pinch of cloves
1/4 tsp salt
1 1/2 tsp maple syrup
1/2 tsp vanilla extract
To make:
Add the pumpkin seeds to a high-power blender or food processor and blend on high, scraping down the sides frequently, for about 10 minutes or until smooth. The pumpkin seeds will transition from a coarse, ground texture to a creamy, silky consistency. Add 1-2 tsp melted coconut oil as needed to help thin out the mixture.
Add the cinnamon, nutmeg, ginger, cloves, salt, maple syrup, and vanilla and blend until completely combined.
Scoop the pumpkin seed butter into a clean jar and store in the fridge (it will last for a few weeks if kept refrigerated). Enjoy!!
