Vegan Strawberry Cheesecake Jars

These vegan, no-bake Strawberry Cheesecake Jars are on a weekly rotation at my house during the summer months. Fresh strawberries are layered atop a silky, creamy, cashew-based “cheesecake” filling with a base of crunchy crushed graham crackers.

The recipe takes less than 10 minutes to make (after pre-soaking the cashews the day before), and you won’t even need to turn on your oven to make these on scorching summer days.

I love making these adorable jars for picnics or relaxed summer dinners outside because they’re so easy to transport, and the presentation is so much fun!

Vegan no-bake Strawberry Cheesecake Jars

Makes 4 jars

Ingredients:

For the strawberries:

  • 1 cup strawberries, sliced

  • 1 tbsp maple syrup

  • squeeze of lemon juice

For the vanilla cheesecake mixture:

  • 1 ½ cups raw cashews, soaked overnight and drained 

  • 1 can of coconut milk, stored in the fridge overnight to separate the solids

  • 1 tbsp vanilla

  • 2 tbsp maple syrup 

  • 1 tbsp lemon juice 

  • Pinch of salt 

Other ingredients:

  • 4 vegan graham cracker sheets

To make:

  1. To prepare the strawberries, add the sliced strawberries and maple syrup to a bowl and add a squeeze of lemon. Mix well to combine. Put the bowl in the fridge to let the flavors mix while prepping the rest of the ingredients.

  2. To a blender, add the raw cashews. Scoop out the solid coconut cream from the top of the coconut milk and set the remaining coconut water aside. Add the coconut cream, vanilla, maple syrup, lemon juice, and salt. Blend on high until the mixture is completely smooth and silky. Feel free to add a few tablespoons of the coconut water as needed to help thin out the mixture if needed. Set aside. 

  3. Crush the graham crackers. You can either do this by putting them into a plastic bag and crushing with a rolling pin, or you can use a mortar and pestle.

  4. Divide the crushed graham cracker crumbs between four small jars. Top with the cheesecake mixture, follow by the sliced strawberries. Make sure to drizzle some of the delicious strawberry juice from the bowl on top!

  5. Seal the jars and place them in the fridge for 30 minutes to set before serving. Enjoy!
