Caramel Apple Oatmeal

caramel apple Oatmeal

Makes about 2 servings

Ingredients:

For the apples;

  • 1 tsp butter or vegan butter

  • 1 medium apple, diced (I like using McIntosh, Pink Lady, Lucy, or other tart apples for this recipe)

  • 1/2 tsp cinnamon

For the oatmeal:

  • 1 cup milk of your choice

  • 1 cup filtered water

  • 1 cup rolled oats

  • 1 tsp maple syrup

  • 1/2 tsp vanilla

  • pinch of kosher salt

  • 1/4 cup walnuts, chopped

For the peanut butter caramel:

  • 2 tbsp maple syrup

  • 1 tbsp creamy peanut butter

  • pinch of kosher salt

To make:

  1. To a medium saucepan over medium heat, melt the butter. Add the chopped apples and add the cinnamon. Saute for about 3 minutes until the apples are softened. Remove from the saucepan and set aside.

  2. To the same saucepan, add the oat milk and water. Bring to a low boil, then add the oats and reduce the heat to medium. Cook for about 3 minutes.

  3. Add the maple syrup, vanilla, and salt and cook until any remaining liquid is absorbed. Scoop into a bowl and top with the chopped walnuts and apples.

  4. In a small bowl, mix together the maple syrup, peanut butter, and salt to make the peanut butter caramel. Drizzle the caramel over the top of the apples and walnuts. Enjoy!
