Caramel Apple Oatmeal
This cozy Caramel Apple Oatmeal is autumn comfort food at its best! Topped with sautéed apples, crunchy walnuts, and a delicious “caramel” sauce made with peanut butter and maple syrup, this oatmeal is the perfect easy and nourishing breakfast for those chilly fall mornings.

Makes about 2 servings
Ingredients:
For the apples;
- 1 tsp butter or vegan butter 
- 1 medium apple, diced (I like using McIntosh, Pink Lady, Lucy, or other tart apples for this recipe) 
- 1/2 tsp cinnamon 
For the oatmeal:
- 1 cup milk of your choice 
- 1 cup filtered water 
- 1 cup rolled oats 
- 1 tsp maple syrup 
- 1/2 tsp vanilla 
- pinch of kosher salt 
- 1/4 cup walnuts, chopped 
For the peanut butter caramel:
- 2 tbsp maple syrup 
- 1 tbsp creamy peanut butter 
- pinch of kosher salt 
To make:
- To a medium saucepan over medium heat, melt the butter. Add the chopped apples and add the cinnamon. Saute for about 3 minutes until the apples are softened. Remove from the saucepan and set aside. 
- To the same saucepan, add the oat milk and water. Bring to a low boil, then add the oats and reduce the heat to medium. Cook for about 3 minutes. 
- Add the maple syrup, vanilla, and salt and cook until any remaining liquid is absorbed. Scoop into a bowl and top with the chopped walnuts and apples. 
- In a small bowl, mix together the maple syrup, peanut butter, and salt to make the peanut butter caramel. Drizzle the caramel over the top of the apples and walnuts. Enjoy!
