caramel apple Oatmeal
Makes about 2 servings
Ingredients:
For the apples;
1 tsp butter or vegan butter
1 medium apple, diced (I like using McIntosh, Pink Lady, Lucy, or other tart apples for this recipe)
1/2 tsp cinnamon
For the oatmeal:
1 cup milk of your choice
1 cup filtered water
1 cup rolled oats
1 tsp maple syrup
1/2 tsp vanilla
pinch of kosher salt
1/4 cup walnuts, chopped
For the peanut butter caramel:
2 tbsp maple syrup
1 tbsp creamy peanut butter
pinch of kosher salt
To make:
To a medium saucepan over medium heat, melt the butter. Add the chopped apples and add the cinnamon. Saute for about 3 minutes until the apples are softened. Remove from the saucepan and set aside.
To the same saucepan, add the oat milk and water. Bring to a low boil, then add the oats and reduce the heat to medium. Cook for about 3 minutes.
Add the maple syrup, vanilla, and salt and cook until any remaining liquid is absorbed. Scoop into a bowl and top with the chopped walnuts and apples.
In a small bowl, mix together the maple syrup, peanut butter, and salt to make the peanut butter caramel. Drizzle the caramel over the top of the apples and walnuts. Enjoy!
