Baked Peaches with Pistachio Ice Cream
When it comes to cooking with fresh summer fruit, the simplest recipes are often the most delicious–and these Baked Peaches with Pistachio Ice Cream are proof of that!
Fresh summer peaches are drizzled with melted butter, maple syrup, and cinnamon and baked, making them even sweeter and softer, and served with a big scoop of pistachio ice cream. While vanilla ice cream is more commonly paired with peaches, I think pistachio is even more delicious because its sweet, almondy flavor perfectly complements the sweet and subtly floral taste of peaches.
You can make your own pistachio ice cream, but I usually use store-bought–it will be amazing either way!
Baked peaches with pistachio ice cream
Makes 4 servings
Ingredients:
4 ripe peaches
2 tablespoons butter or vegan butter
2 tablespoons maple syrup
¼ tsp cinnamon
1 pint pistachio ice cream
To make:
Preheat the oven to 375 F.
Slice the peaches in half and remove the pits, then place them skin side down into a glass or ceramic baking dish (I used a pie dish).
Melt the butter in the microwave or on the stovetop, then drizzle over the peaches. Next, drizzle the peaches with the maple syrup and sprinkle with cinnamon.
Bake the peaches until soft and lightly golden brown, about 10-12 minutes.
Remove the peaches from the oven and let cool for about 5 minutes, then divide into four bowls and top with generous scoops of pistachio ice cream. Enjoy!!
