Basil Pistachio Goat Cheese Spread

This Pistachio Goat Cheese Spread is basically a cross between whipped goat cheese and herby basil pistachio pesto. It’s the perfect combination of fresh, nutty, and creamy flavors and makes an amazing dip or spread to serve with spring or summer recipes.

The pistachios add some delicious sweetness and nuttiness that works perfectly with rich, tangy goat cheese, and the fresh flavors of lemon and basil brighten the spread and bring it all together. 

This Basil Pistachio Goat Cheese Spread is an excellent dip for charcuterie boards like this Spring Veggie Board (I love serving it with rustic herb crackers and veggies) and it also makes a delicious, tangy sandwich spread.

Basil Pistachio Goat Cheese Spread

Serves 2-4

Ingredients:

  • 4 tbsp shelled pistachios, dry roasted and unsalted

  • ½ cup fresh basil leaves

  • 1 clove of garlic, minced  

  • 2 tbsp fresh lemon juice 

  • 2 tbsp olive oil 

  • 1 tbsp lemon zest 

  • 4 oz goat cheese 

  • ½ tsp kosher salt 

  • 1 tsp honey 

  • Optional garnish: basil, chives, olive oil 

To make:

  1. In a blender or food processor, blend together the pistachios, basil, garlic, lemon juice, and olive oil until smooth. 

  2. Add the lemon zest, goat cheese, salt, and honey. Blend until smooth and well incorporated. 

  3. Garnish with basil, chives, and a drizzle of olive oil (optional). Serve at room temperature. Enjoy!
