Bubble Sugar

I made bubble sugar to create edible "seafoam" bubbles to decorate my Blue Ocean Cheesecake! It's surprisingly easy to make, with only a few ingredients and supplies.

If you're looking for the cheesecake recipe, I adapted it from Sally's Baking Addiction’s Perfect No-Bake Cheesecake, but for a coconut lime flavor, I added 2 tbsp lime zest to the crust, lime juice instead of lemon juice in the filling, and added 2 tsp coconut extract to the filling. To turn the top layer blue, I mixed in 1 tsp blue spirulina. 

Bubble Sugar

Ingredients and Supplies:

  • light corn syrup

  • blue food coloring

  • silicone baking mat

To make:

  1. Preheat your oven to 300F and line a baking tray with a silicone baking mat.

  2. Pour a few tablespoons of the corn syrup on top and use an offset spatula to spread it into a very thin layer. Bake for 15-20 minutes or until the bubbles are no longer moving.

  3. Remove from the oven and let cool completely, then carefully peel the bubble sugar candy off the silicone mat.
