Cranberry, Pistachio, and Herb Goat Cheese Log
Herbed goat cheese logs are one of my favorite appetizers for entertaining because they’re so easy—they’re usually only made with a few ingredients, and you can make them ahead of time (I think the flavor is often better if they’re made in advance!). In this version, I’m doing a holiday spin on a classic herbed goat cheese log by adding cranberries and pistachios. The cranberries add a delicious sweet-tart flavor to the savory goat cheese, while the pistachios bring crunch, and the green and red color combination is perfect for the holidays.
Cranberry, Pistachio, and Herb Goat cheese Log
Ingredients:
5 oz goat cheese log
¼ cup pistachios, minced
¼ cup dried sweetened cranberries, minced
1 tbsp thyme, minced
1 tbsp rosemary, minced
1/2 tsp honey for garnish
Crackers and bread for serving
To make:
To a plate, add the pistachios, cranberries, thyme, and rosemary and mix well. Roll the goat cheese log in the mixture, pressing firmly to make sure the topping sticks (don’t forget to press the sides, too!).
Once the log is coated, place in on a plate to serve and drizzle with honey. Serve with crackers and bread.
