Flower Fairy Sun Tea

The weather has been so beautiful and sunny--and it inspired me to make my first sun tea of the year! On hot days, it's one of my favorite things to make (and it also helps remind me to stay hydrated). The spring flowers are in full bloom here, so I wanted to make a floral blend--something that tastes like a sunny spring meadow in a glass. And I have to say, I think I was successful! :)

This recipe combines a few of my favorite dried herbs and flowers (though you can absolutely use fresh, if you have them on hand). Hibiscus adds a bright, tangy flavor and gives the tea its beautiful pink color. Lemon balm adds a hint of citrus and sunshine (and it also has calming effects). Rose and calendula add soothing properties and a delicate floral taste, and I also added a few blue cornflowers for their beautiful color.

Ingredients:

  • 1 tbsp blue cornflower

  • 1 tbsp hibiscus

  • 2 tbsp rose petals

  • 2 tbsp calendula

  • 2 tbsp lemon balm

  • ½ gallon (64 oz) filtered water

To make:

  1. Add the dried flowers an herbs to a large jar and cover with filtered water. Stir well to combine. Cover the jar and place it in direct sunlight or on a sunny windowsill for 2-4 hours to infuse.

  2. Strain out the herbs. Place the tea in the fridge to chill or serve right away over ice.
