Green Garden Patch Dip

This Green Garden Patch Dip is such a fun way to enjoy spring produce. It starts with a creamy, herby Green Goddess Hummus that’s packed with leafy greens, spring herbs, and a squeeze of lemon, and then gets topped with colorful crunchy veggies arranged like a little spring garden in a dish.

It’s perfect for parties or just as a fun afternoon snack. You can get creative with the veggies you use and turn it into a full centerpiece—it’s as pretty as it is delicious!

Green Garden Patch Dip

Makes an 8x8 dish of dip (about 8 servings)

Ingredients:

For the Green Garden Patch Dip:

  • 2 batches Green Goddess Hummus (recipe below)

  • Mini bell peppers

  • Radishes

  • Mini carrots 

  • Asparagus tops

  • Purple cauliflower

Green Goddess Hummus

  • 2 (15 oz) cans garbanzo beans, drained and rinsed

  • 2 cups packed baby spinach 

  • 1/2 cup basil

  • 1/2 cup parsley

  • 1/2 cup dill

  • 1/2 cup cilantro 

  • 1/2 cup green onions 

  • 1 garlic clove

  • Juice from 2 lemons 

  • 1/2 cup olive oil 

  • 1/3 cup tahini 

  • 1 tsp salt 

  • Minced fresh herbs and olive oil for garnish


To make:

  1. Make two batches of Green Goddess Hummus. To a blender or food processor, add the spinach, basil, parsley, dill, cilantro, green onions, garlic, lemon juice, and olive oil. Blend until smooth. Add the chickpeas, tahini, and salt and blend until creamy and smooth. Add a splash of water to thin if necessary. Taste and adjust, adding more salt or lemon juice if necessary to balance the flavor. 

  2. Scoop the hummus into an 8x8 inch baking dish. 

  3. Press the veggies into the top to create a “garden patch” look. Enjoy!
