Lemon Basil Pasta Salad
Ingredients:
2 batches Lemon Basil Dressing
16 oz pasta, cooked according to package directions in salted water
1 can Cannellini beans, rinsed and drained
3 large heirloom tomatoes, chopped
8 oz Bocconcini mozzarella pearls
2 cups arugula
1/4 cup red onion, thinly sliced
To make:
Prep the dressing and cook the pasta according to directions in salted water.
To a large bowl, add the pasta, beans, heirloom tomatoes, mozzarella, arugula, and red onion. Top with the dressing and toss well.
Serve right away or store in the fridge overnight (it’s even better the next day!)
