Pumpkin Hummus
I can be a bit picky with pumpkin in savory recipes—I never want it to taste too sweet or overpower the other ingredients. This Smoky Pumpkin Hummus is my idea of a perfect savory pumpkin recipe. The pumpkin adds just a touch of subtle sweetness and a rich, creamy texture, while the spices balance it all out. It’s smoky, savory, and feels just right for fall.
Smoky Pumpkin Hummus
Ingredients:
1 cup chickpeas, drained and rinsed
1 cup pumpkin purée
1 tbsp tahini
Juice from 1 lemon
1/4 cup extra virgin olive oil
1 tsp salt
1 tsp garlic powder
1 tsp smoked paprika
1/2 cumin
1/2 curry powder
Pumpkin seeds and smoked paprika for garnish
Crackers and veggies for serving (rosemary crackers and carrots are my favorite with this recipe!)
To make:
Add the chickpeas, pumpkin, tahini, lemon, olive oil, salt, and all the spices to a high power blender or food processor and blend until the hummus is completely smooth.
Scoop into a bowl and sprinkle with smoked paprika and pumpkin seeds for garnish. Serve with crackers and veggies.
