Rainbow Lettuce Cups
These mini Rainbow Lettuce Cups are the perfect bite-sized appetizer for a spring or summer party. Made with colorful beet hummus and fresh veggies, they’re light, refreshing, and so fun to eat!

Makes 4-6 servings
Ingredients:
2 heads Little Gem lettuce (or any other small lettuce), washed and dried
1/4 cup beet hummus, homemade (here’s my recipe!) or store-bought
1/2 cup carrots, sliced into ribbons
1/2 cup cucumber, sliced into ribbons
1/2 cup bell pepper, thinly sliced
1/2 cup radishes, thinly sliced
1/4 cup scallions, thinly sliced
edible flowers for garnish
To make:
Prep the veggies. Remove the lettuce leaves from the lettuce and arrange on a serving tray. I like to use the middle leaves because they are more uniform in size and set the very outer and inner leaves aside to use in salads and other recipes.
Add a scoop of beet hummus to each lettuce cup. Top each lettuce cup with a few carrot ribbons, cucumber ribbons, bell pepper slices, radish slices, and a sprinkle of scallions. Garnish with edible flowers if desired. Enjoy right away.
