Rainbow Lettuce Cups

These mini Rainbow Lettuce Cups are the perfect bite-sized appetizer for a spring or summer party. Made with colorful beet hummus and fresh veggies, they’re light, refreshing, and so fun to eat!

mini rainbow lettuce cup bites

Makes 4-6 servings

Ingredients:

  • 2 heads Little Gem lettuce (or any other small lettuce), washed and dried

  • 1/4 cup beet hummus, homemade (here’s my recipe!) or store-bought

  • 1/2 cup carrots, sliced into ribbons

  • 1/2 cup cucumber, sliced into ribbons

  • 1/2 cup bell pepper, thinly sliced

  • 1/2 cup radishes, thinly sliced

  • 1/4 cup scallions, thinly sliced

  • edible flowers for garnish

To make:

  1. Prep the veggies. Remove the lettuce leaves from the lettuce and arrange on a serving tray. I like to use the middle leaves because they are more uniform in size and set the very outer and inner leaves aside to use in salads and other recipes.

  2. Add a scoop of beet hummus to each lettuce cup. Top each lettuce cup with a few carrot ribbons, cucumber ribbons, bell pepper slices, radish slices, and a sprinkle of scallions. Garnish with edible flowers if desired. Enjoy right away.
