Rose & Raspberry Chocolate Truffles

With just a few ingredients, these beautiful little truffles make the perfect last minute Valentine’s Day treat for loved ones, or yourself! Crushed freeze-dried raspberries and dried rose petals give this recipe a special touch, and can easily be swapped out with dried strawberries or any other berry of your choice.

Rose & Raspberry Chocolate Truffles

Makes about 15 truffles


Ingredients

1 cup semisweet chocolate chips

1/2 cup heavy cream or coconut cream

1/2 cup freeze dried raspberries, crushed

1/8 cup rose petals

1/2 cup shredded coconut, optional


To make:

  1. Over the stovetop or in the microwave, heat the heavy cream or coconut cream until hot (but not boiling). Add the chocolate chips to a bowl, then pour the hot cream over the top. Let sit for 3 minutes so that the chocolate begins to melt.

  2. Stir the chocolate and cream mixture until the chocolate is completely melted. Cover and refrigerate, at least 2 hours.

  3. Use a teaspoon or cookie scoop to roll into balls. Refrigerate again for 30 minutes.

  4. Roll the truffles in crushed raspberries, rose petals, and coconut. Enjoy!!
