Happy Spring Equinox!! After a very long winter, I’m so happy that we’re officially welcoming warmer, longer days. To celebrate, we’re making this beautiful, fragrant Spring Flower Simmer Pot.

I made my simmer pot with roses and chamomile, but feel free to try it with any fragrant spring flowers of your choice! I think hyacinths and daffodils would work wonderfully here, too.

To make this simmer pot, simply combine the ingredients in a medium pot or dutch oven, add a few inches of water, and bring to a super gentle simmer over very low heatβ€”if you overheat or boil fresh flowers, they won't smell good!!

Spring Flower Simmer Pot

Makes 1 simmer pot

Ingredients:

  • 1 tbsp dried lavender

  • 1 lemon, thinly sliced

  • 1 sprig of fresh mint

  • Roses or rose buds, stems removed (I used about 6 spray roses)

  • 1 cup rose petals

  • 1/2 cup fresh chamomile flowers

  • 10 drops of rose essential oil

  • 10 drops of lavender essential oil

To make:

  1. Combine all ingredients in a medium pot or dutch oven. Add about 4 inches of water to the pot. Place on the stove and bring to a simmer over low heat. Be careful of overheating the water beyond a very gentle simmer! Boiling flowers will ruin their scent.

  2. Let simmer for several hours, refilling with water as needed. Enjoy!!
