Vegan Date Caramel
This silky smooth, creamy Vegan Date Caramel is one of my favorite recipes to make this time of year. It’s wonderful as a dip for fruit or as a caramel sauce in vegan desserts, and it’s so fast and easy to make!
How to Make Vegan Date Caramel
Vegan date caramel requires only a few minutes and just five ingredients to make:
Dates
Full fat coconut milk
Maple syrup
Vanilla extract
Salt
Add all ingredients to a high-power blender or food processor and blend at a medium speed until the mixture is perfectly smooth.
The result will be a sweet, melt-in-your mouth date caramel! I love the nutty flavor of the dates and the subtle hint of toasted coconut in this recipe. This date caramel reminds me of Samoas cookies (minus the chocolate) because of its wonderful, warm and nutty toasted coconut-meets-caramel taste.

Makes about 1 cup of date caramel
Ingredients:
1 cup pitted medjool dates
1/2 cup full fat coconut milk
1/4 cup maple syrup
1 tsp Vanilla extract
1/4 tsp salt
To make:
Combine all ingredients in a high power blender or food processor.
Blend for several minutes, scraping down the sides as needed, until incorporated and completely smooth. Enjoy!!
