Winter Solstice Simmer Pot
Happy Winter Solstice!! We’re welcoming the winter season and bringing some much-needed warmth and coziness to the shortest day of the year with this wonderfully comforting, aromatic simmer pot.
I often struggle with seasonal sadness around this time of year, when the days are at their darkest. It seems like the days blend into the nights, and I spend very little time outside because of the cold.
Winter Solstice is a beautiful reminder that longer, better days are just around the corner. Instead of letting myself be too consumed by negativity about the darkness, I like to use this day to practice my favorite hygge rituals. I make tea, listen to music, cook, and make crafts.
And with a surplus of leftover winter fruits and aromatics from holiday cooking, this Winter Solstice Simmer Pot seemed like the perfect simple, cozy craft to make today. With aromatic winter ingredients like fresh cranberries, oranges, pine, and cinnamon, this simmer pot will fill your entire home with the most wonderful aroma.
For a beautiful holiday gift, simply swap out dried fruit for the fresh fruit this recipe calls for. Combine the spices and dried fruit in a jar and make a little label with the simmer pot directions listed below (the instructions are the same whether you’re using fresh or dried fruit), then give to friends and family!

Winter Solstice Simmer Pot
Makes 1 simmer pot
Ingredients:
Fresh cranberries, one large handful
1 orange, sliced
2-3 sprigs of pine or rosemary
1 apple, sliced
2 sticks cinnamon
Pinch of whole cloves
2-4 star anise
To make:
Add all ingredients to a medium pot or dutch oven. Add around 4 inches of water to the pot. Place on the stove and bring to a simmer over low heat.
Let simmer for several hours, refilling with water as needed. Enjoy!!
Note: For safety reasons, please never leave your simmer pot unattended for long periods of time.
