Woodland Berry Fruit Tart

A favorite among my friends and family, this Woodland Berry Fruit Tart is made with a delicious almond flour crust and creamy filling. I used crushed pistachios and mint springs to recreate the look of the forest floor, and strawberries, blackberries, and edible flowers to look like woodland berries—it’s so whimsical and cute!

This recipe makes 1 large tart, but I doubled the recipe to create five 6-inch mini tarts (as pictured)—if you’d like to make adorable single serving mini tarts, I highly recommend doing the same!

Woodland Berry Fruit Tart

Makes 1 large tart

Ingredients:

For the crust:

  • 2 cups almond flour 

  • ¼ cup cane sugar

  • ⅓ cup melted butter

  • 1 tsp vanilla extract 

  • Pinch of salt 

For the filling:

  • 8 oz mascarpone cheese, room temperature

  • 8 oz cream cheese, room temperature 

  • ¼ cup powdered sugar 

  • 1 ½ tsp vanilla extract

For the topping:

  • ½ cup pistachios, finely crushed 

  • Fresh strawberries, raspberries, blackberries, and blueberries

  • 2 tbsp apricot preserves plus 1 tbsp water for the glaze (optional)

  • Mint sprigs and edible flowers

To make:

  1. Preheat the oven to 350 F. To make the crust, combine the almond flour, sugar, melted butter, vanilla, and salt in a medium bowl and mix until crumbly. Scoop the crust into a tart pan and use your fingers or the bottom of a glass jar to press the crust into the bottom and sides in an even layer.

  2. Bake for 15-20 minutes until the crust turns a light golden brown. Let cool completely.

  3. Meanwhile, make the filling. To a stand mixer or large bowl, add the mascarpone, cream cheese, powdered sugar, and vanilla. Using a whisk attachment or handheld mixer, beat the ingredients until light and fluffy.

  4. Using a gallon bag or piping bag, fill the cooled tart shell with the cream filling. Sprinkle each with crushed pistachios and decorate with strawberries, blackberries, raspberries, and blueberries. If you’d like to make a glaze for the fruit, mix together 2 tbsp apricot preserves and 1 tbsp water in a small bowl, then brush over the berries. Garnish with mint springs and edible flowers.
