Autumn Harvest Butternut Squash Pizza

Autumn Harvest Butternut Squash Pizza

Makes 1 large or 2 small pizzas

Ingredients:

For the roasted butternut squash:

  • 1 small butternut squash, cut into small cubes (about 2 cups)

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1/2 tsp kosher salt

  • 1/4 tsp pepper

For the pizza:

  • 16 oz pizza dough

  • 2 tbsp olive oil, plus more for greasing the pan

  • 1 cup low-moisture mozzarella cheese, shredded

  • 1 cup smoked gouda cheese, shredded

  • 1/4 cup parmesan cheese, grated

  • 1/2 small red onion, thinly sliced

  • 2 tbsp fresh sage leaves

  • 2 tsp red pepper flakes (feel free to adjust depending on how spicy you want your pizza to be!)

  • 2 tbsp honey

To make:

  1. Preheat the oven to 450F.

  2. Add the cubed butternut squash to a sheet pan and drizzle with the olive oil. Add the garlic powder, salt, and pepper and toss to coat. Roast for 10 minutes or until lightly golden brown, then remove from the oven and set aside. (Note: The squash can be a little underdone because it will finish cooking on the pizza)

  3. Roll out the pizza dough onto a floured surface. Grease another sheet pan (or pizza pan) with olive oil, then add the pizza dough to the pan.

  4. Drizzle the pizza with 1 tbsp of the olive oil, then sprinkle with the mozzarella, smoked gouda, and parmesan. Top with the roasted butternut squash. Add the red onion, sage leaves, and red pepper flakes, then drizzle the top with another tablespoon of olive oil.

  5. Bake the pizza for 10-12 minutes or until the crust is golden brown and the middle is cooked through.

  6. Remove from the oven and drizzle with honey before serving. Enjoy!
