Chocolate Chia Pudding Cups with Chocolate Cashew Cream

Okay, everybody. Real talk.

These Chocolate Chia Pudding Cups with Chocolate Cashew Cream have achieved a new level of deliciousness. They’re silky, creamy, and rich, all at the same time. Plus, they’re packed with nutrients and completely dairy-free (even though you’d never know from the taste!).

Even though they’re perfect for breakfast (thanks to energizing, nutrient-dense ingredients like chia, cashews, and cacao), I refuse (yes, refuse!!) to label them as a breakfast food only, because they totally double as a rich, creamy dessert. 

Sweet, chocolatey chia and fluffy, creamy cashew pudding complement each other perfectly, a combination that reminds me of those little layered pudding cups I used to love as a kid--but as a nutritious, dairy-free version with a lot less sugar. :)

Chocolate Chia Pudding Cups with Chocolate Cashew Cream

Makes 3-4 pudding cups. Vegan and Dairy-Free.

Ingredients:

For the chia:

  • Β½ cup chia seeds

  • 2 cups nut milk of your choice

  • 2 tsp vanilla extract 

  • 4 tsp maple syrup 

  • 8 tsp cacao powder

  • ΒΌ tsp salt

For the cashew pudding:

  • 1 cup raw cashews, soaked overnight, drained and rinsed thoroughly 

  • ΒΌ cup nut milk of your choice 

  • 1 tsp vanilla

  • 2 tbsp maple syrup 

  • 2 tbsp cacao powder 

  • Pinch of salt

Other ingredients:

  • Red currants or berries of your choice

To make:

  1. Make the chia pudding. In a large jar or bowl, combine all chia ingredients (chia seeds, nut milk, vanilla extract, maple syrup, cacao, and salt) and stir well. Cover and let sit overnight. The next day, stir the mixture again until completely incorporated (the chia tends to separate while sitting overnight).

  2. To prep the cashews, add the raw cashews to a jar, cover with filtered water, and let sit overnight. The next day, drain and rinse thoroughly.

  3. Make the cashew pudding. In a blender, combine, all cashew pudding ingredients (soaked cashews, nut milk, vanilla, maple syrup, cacao, and salt. Blend on medium speed, scraping the sides as needed, until thoroughly combined and fluffy.

  4. Assemble the pudding cups. Scoop a small layer of cashew cream into each cup, followed by a layer of chia pudding, and another layer of cashew cream. Top with red currants or berries of your choice. Enjoy!!
