These Chocolate Raspberry Overnights Oats are by far the best overnight oats I have ever had. A thick, creamy base of chocolate overnight oats is topped with a layer of raspberry chia jam and topped with a delicious chocolate shell. For breakfast. Although you could easily eat this recipe as a dessert--it really is that good!!

I can't think of a more perfect classic flavor combination than chocolate and raspberry, and these overnight oats taste like a delicious chocolate raspberry dessert. The richness and creaminess of the oat layer, delightfully sweet-tart raspberry chia jam, and crunchy chocolate shell make the best combination of flavors and textures.

How to Make Overnight Oats with a Chocolate Shell

Overnight oats are super quick and easy to make. Simply stir together the ingredients for the overnight oats, then scoop them into two 8 oz jars (if you don’t have jars, glasses will work great here too!). Top them with homemade Raspberry Chia Jam and an easy two ingredient chocolate shell.

Then, cover and pop them in the fridge at least 8 hours or overnight. Take them out of the fridge the next morning and enjoy!!

How to Store Overnight Oats

These overnight oats will last up to three days in the fridge and are excellent for meal prepping! Keep the oats covered while in the fridge (this is why I love storing them in jars with lids) to ensure freshness. I also find that the chocolate shell creates an added seal over the oats, keeping them extra fresh!

Chocolate Raspberry Overnight Oats

Makes 2 servings (about 8 oz each)

Ingredients:

For the oats:

  • 1 cup old-fashioned rolled oats

  • 1 cup non dairy milk, such as oat milk

  • 2 tbsp raw cacao

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

  • Pinch of sea salt

For the chocolate shell:

  • 1. 5 oz dark chocolate

  • 1/2 tsp coconut oil

Other ingredients:

To make:

  1. Make the overnight oats. Combine all ingredients for the oats (the rolled oats, milk, cacao, syrup, vanilla, and sea salt) in a bowl and stir well to completely combine. Divide into two 8 oz jars (or glasses).

  2. Make the chocolate shell. Break the chocolate into smaller pieces and add it to a small glass. bowl with the coconut oil. Microwave in 10 second intervals, stirring between each interval, until the chocolate is completely smooth and melted.

  3. Divide the Raspberry Chia Seed Jam into two parts and scoop over the two jars of overnight oats in an even layer. Drizzle the chocolate shell to create a top layer over each of the jars.

  4. Place the overnight oats in the refrigerator and let sit at least 8 hours or overnight.** Take them out of the fridge the next morning and enjoy!!

    ** These Chocolate Raspberry Overnight Oats will last up to 3 days in the fridge.
