Cucumber Bites with Mango Sriracha Caviar
These cucumber bites may look fancy, but they’re surprisingly easy to make. Homemade mango sriracha caviar adds the perfect sweet and spicy pop to cucumbers topped with creme fraiche.

Ingredients:
Mango sriracha caviar:
2 tbsp mango puree
2 tbsp sriracha
¼ cup water
1 tsp agar agar powder
Cold vegetable oil (refrigerate for several hours in advance)
Supplies: dropper or pipette
Cucumber bites:
½ english cucumber, sliced
½ cup Creme fraiche
Mango sriracha caviar
Dill for garnish
To make:
Pour the vegetable oil into a tall glass and place back into the fridge to keep cold while cooking. A tall glass will allow the drops to form better as they fall.
To a small saucepan, add the mango puree, sriracha, water, and agar agar powder and whisk together until smooth.
Cook the mixture over medium heat, stirring frequently, until it reaches a boil. Reduce the heat to a simmer a cook for another minute, whisking constantly to activate the agar.
Remove from the heat and pour into a bowl or cup and let cool for 3 minutes.
Take the glass of oil out of the fridge, then use the dropper to drop the mixture into the oil. As you go, allow the drops to set for a few seconds, then carefully stir to separate them.
Strain them and place them into a glass of cold water. The drops will sink to the bottom, and the excess oil will stay on top. Strain them again.
To make the cucumber bites, arrange the cucumbers on a serving dish and top each with a small dollop of creme fraiche. Add a small scoop of the caviar and a sprig of dill to each for garnish.
