Seafoam Sour
This siren-inspired Seafoam Sour cocktail is made with green tea, gin, and simple syrup tinted with blue spirulina.
Seafoam Sour
Ingredients:
1 oz fresh lemon juice
1 oz simple syrup with blue spirulina*
3 oz green tea, chilled
2 oz gin (replace with more green tea for an alcohol free version)
1 fl oz cocktail foamer (you can also use egg whites or another egg white substitute here)
To make:
Add all ingredients to a cocktail shaker or glass with ice. Shake well until very frothy, at least 30 seconds. Strain into a glass and serve.
*To make the simple syrup, add 1/2 cup filtered water and 1/2 cup granulated sugar to a saucepan and simmer, stirring occasionally until the sugar is completely dissolved. Remove from the heat. Add a few spoonfuls of the syrup into a small glass or bowl and add 1/2 tsp blue spirulina, whisking until the clumps are dissolved. Then add the spirulina mixture back into the syrup and mix. Transfer to an airtight container and refrigerate until ready to use.
