Woodland “Forest Fairy” Crostini Bites
These delicious Forest Fairy Crostini Bites are made from toasted baguette slices, a creamy goat cheese spread, and assorted fruits and herbs. I absolutely love recipes like this where everything starts with the same base, but different toppings can create different flavor combinations!
This crostini recipe can be made with three different sweet-and-savory fruit and herb combinations:
- Strawberry & Mint Crostini 
- Blackberry & Thyme Crostini 
- Tomato & Dill Crostini 
Forest fairy crostini bites
Serves 6-8
Ingredients:
For the goat cheese spread:
- 11 oz goat cheese 
- 4 oz cream cheese 
- 2 tbsp fresh lemon juice 
- 1 tsp honey 
For the crostini:
- 1 baguette, thinly sliced 
- 2 tbsp olive oil 
- Blackberries, sliced strawberries, cherry tomatoes (halved), thyme, mint, dill 
- Microgreens for garnish 
To make:
- Preheat oven to 400 degrees F. 
- Line a baking tray with parchment paper and add the baguette slices in an even layer. Lightly brush the sliced bread with olive oil. Bake for 10-12 minutes until lightly golden brown, then remove from the oven and let cool completely. 
- Make the goat cheese spread. To a medium bowl, add the goat cheese, cream cheese, lemon juice, and honey. Use a fork or whisk to mix well. Scoop into a small bowl or storage container and set aside. 
- To assemble the crostini, spread the goat cheese mixture onto the toasted baguette slices and top with an assortment of the following fruit and herb combinations: Blackberry & Thyme, Strawberry & Mint, Tomato & Dill.
