Peach & Strawberry Breakfast Crumble
This breakfast crumble is one of my favorite ways to enjoy fresh summer fruit. It’s made with fresh peaches, ripe strawberries, and a simple oat crumble topping—and I love enjoying it with a big scoop of vanilla greek yogurt!
Peach & Strawberry Breakfast Crumble
Ingredients:
For the crumble topping:
1 cup rolled oats
1/4 cup almond flour
1/2 cup almonds, finely chopped
1 tsp cinnamon
1/2 tsp salt
1/4 cup butter, melted
2 tbsp maple syrup
For the filling:
4 cups peaches, sliced (you can either remove the skins or leave them on)
1 cup strawberries, sliced
2 tsp cornstarch (optional, but it will help thicken the filling)
Vanilla greek yogurt for serving
To make:
Preheat your oven to 350F. Butter a 9 × 9-inch baking dish.
To a large bowl, add the peaches, strawberries, and cornstarch if using. Mix well, then add to the baking dish in an even layer.
To a medium bowl, add the oats, almond flour, chopped almonds, cinnamon, and salt. Stir to combine, then drizzle with the melted butter and maple syrup and mix well. Sprinkle the mixture on top of the fruit layer.
Bake for 30-35 minutes or until the crumble topping is lightly golden brown. Remove from the oven and let cool for a few minutes, then enjoy with a big scoop of vanilla greek yogurt.
