Summer Tomato Sauce

Whenever I have lots of summer tomatoes, this sauce is one of my favorite ways to enjoy them! I love it on pizza or as a quick pasta sauce.

Summer Tomato Sauce

Ingredients:

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1/4 tsp red pepper flakes (add more or less depending on how spicy you like it!)

  • 2 pounds tomatoes, chopped

  • 1 tbsp kosher salt, plus more to taste

  • 1 tbsp oregano

  • 1 tbsp tomato paste (optional, but adds richness)

  • 4 fresh basil leaves

To make:

  1. To a saucepan over medium heat, add the olive oil and garlic and cook for 30 seconds to 1 minute, until fragrant.

  2. Add the tomatoes, salt, oregano, tomato paste if using, and fresh basil and bring to a simmer. Once the tomatoes have softened and released most of their juices, cover and reduce the heat to low. Cook for 20-25 minutes. Season with more salt to taste.
