Pomegranate and Goat Cheese Endive Bites
These adorable little endive bites are a wonderful, simple holiday appetizer. Crisp, slightly bitter endive leaves are topped with a savory goat cheese mixture, crunchy walnuts, and juicy, sweet pomegranate seeds.
Pomegranate and Goat Cheese Endive Bites
Makes 6-8 servings
Ingredients:
8 oz goat cheese
1 tsp honey
1 tsp thyme
1/2 salt
Splash of half and half (plus more as needed)
3 belgian endives
1/4 cup walnuts, finely chopped
1/2 cup pomegranate arils (seeds)
To make:
To a small bowl, add the goat cheese, honey, thyme, salt, and a splash of half and half. Use a fork to mix until combined, adding more half and half if needed to thin out the mixture. It should be similar in consistency to cream cheese so that it’s easy to spread. Note: The goat cheese mixture can be made ahead and refrigerated for up to 3 days in advance.
Remove each leaf from the endives and arrange on a serving dish. Spread the goat cheese mixture onto the bottom of each leaf, then sprinkle with the walnuts and pomegranate seeds.
