Autumn Apple Cheddar Sandwich


Fall is basically my excuse to put apples in just about everything—including sandwiches. This apple cheddar sandwich combo is one of my favorites for a quick lunch or packing up for a picnic. The tart crunch of the apple with sharp cheddar and a maple dijon spread? So good. It’s simple, delicious, and tastes like autumn.

Autumn Apple Cheddar Sandwich

Ingredients:

For the maple dijon mayo: 

  • ¼ cup mayo 

  • 1 tbsp each of stone ground

  • 1 tbsp regular Dijon

  • 1 tbsp thyme

  • 1 tsp maple syrup

For the sandwiches: 

  • Bread (baguette, sourdough, or multigrain all work great!)

  • Roast smoked turkey breast or plant-based smoked turkey, sliced 

  • Sharp white cheddar cheese, sliced 

  • Apple, thinly sliced (slightly tart apples like macintosh, pink lady etc. are my favorite for this sandwich)

  • Red onion, thinly sliced 

  • Lettuce 

  • Parchment and twine for wrapping (optional)

To make:

  1. To a small bowl, add all ingredients for the sauce. Mix well to combine and set aside. 

  2. To make a sandwich, spread the maple dijon mayo onto two slices of bread. Top one slice with the turkey or plant-based turkey, cheddar cheese, a layer of apple slices, onion, and lettuce. Top with the other side of the bread. 

  3. Wrap the sandwich with parchment and tie with twine (optional).
