Chocolate Hazelnut Energy Bites

These delicious Chocolate Hazelnut Energy Bites are the perfect sweet snack for busy weeks. Made with wholesome ingredients like dates, hazelnuts, cacao, and chia, they taste like a chocolate hazelnut truffle while providing a boost of energy and nourishment.

These bites are the perfect meal prep snack. I love making a batch to enjoy all week long!

Chocolate Hazelnut Energy bites

Makes about 10-12 bites

Ingredients:

  • 3/4 cup raw hazelnuts

  • 1 cup pitted dates (8-10 dates)

  • 2 tbsp cacao powder

  • 2 tbsp cashew butter

  • 1 tbsp chia seeds

  • 1/4 tsp sea salt

  • 1/2 tsp vanilla

To make:

  1. To a high speed blender or food processor, add the hazelnuts and blend until very finely chopped. Pour about half of the chopped hazelnuts onto a plate and set aside (leaving the remainder of the hazelnuts in the blender or food processor).

  2. Next, add the dates, cacao powder, cashew butter, chia seeds, salt, and vanilla and blend on low until the ingredients are completely incorporated and a sticky dough begins to form.

  3. Use a spoon to scoop out the dough, then roll the spoonful between your hands to form into a ball. Roll the ball in the chopped hazelnuts to coat and set aside on another dish. Repeat with the rest of the dough.

  4. Enjoy the bites right away, or keep them in the fridge (they’ll last about a week).
