Blueberry Pecan Homemade Instant Oatmeal

This Blueberry Pecan Homemade Instant Oatmeal is a cozy, make-ahead breakfast that’s perfect for busy mornings. It’s very easy to make ahead (and even easier to prep before eating) but still feels wholesome and comforting. Just add hot water and your favorite toppings for a quick and comforting breakfast.

Makes 4 dry cups of instant oatmeal mix

Ingredients:

  • 4 cups old fashioned rolled oats

  • 1 cup freeze-dried blueberries

  • 1 cup chopped pecans

  • 1/2 cup brown sugar

  • 1/4 cup flaxseed meal  

  • 2 tsp ground cinnamon

  • 1/2 tsp ground cardamom

  • 1 tsp kosher salt

  • Milk, yogurt, or fruit of your choice for serving

To make:

  1. Add the oats to a blender or food processor and pulse a couple of times to grind the oats into smaller pieces. They should be similar in texture to instant oatmeal, but not too finely ground.

  2. To a large bowl, add the ground oats, blueberries, pecans, brown sugar, flaxseed, cinnamon, cardamom, and kosher salt. Mix well, then store in an airtight container for up to 2 months.

  3. To prepare the oats, add equal parts of boiling water and the instant oatmeal mixture to a bowl, mix well, and let sit for a minute or two until the oats absorb the water. I like to add greek yogurt and bananas to my oatmeal, but feel free to add any toppings you like!
