Lemon Honey Ginger Tea

This Lemon Honey Ginger Tea is bright, soothing, and wonderfully comforting, a blend of citrus and herbs that feels especially nice in the colder months or when you’re under the weather. It’s easy to make and perfect for slow mornings or cozy evenings.

Lemon Honey Ginger Tea

Ingredients:

For the Ginger Honey:

  • 1 cup of honey

  • 1/4 cup of finely chopped ginger root

Lemon Honey Ginger Tea:

  • 8 oz boiling water

  • 1 tbsp dried lemon balm

  • Spring of spearmint (optional)

  • Juice from 1/2 lemon

  • Ginger honey to taste

To make:

  1. To make the ginger honey, add finely chopped ginger root to a jar and cover with honey. Mix well to combine, let it sit for 1-2 weeks to infuse, flipping the jar over each day to make sure the ginger stays submerged. Make sure to strain out the ginger after 2 weeks to keep it from spoiling.

  2. Pour the boiling water over the lemon balm and let steep for 5-10 minutes. Strain out the herbs and add spearmint, lemon juice, and ginger honey.
