Spring Morning Simmer Pot

This simmer pot was inspired by the scent of fresh air on a spring morning—crisp and invigorating, light and floral. Made with lemon, rosemary, lavender, and chamomile, it’s a simple blend of ingredients that smell fantastic together. I love making this simmer pot recipe whenever I’m spring cleaning—it makes the whole house smell fresh!

Spring Morning Simmer Pot

Makes 1 simmer pot

Ingredients:

  • 1 large lemon (or 2 small lemons), sliced

  • 2 sprigs fresh rosemary

  • 2 tbsp lavender

  • 2 tbsp chamomile (fresh or dried)

To make:

  1. Add all ingredients to a large pot and cover with a few inches of water. Bring to a gentle simmer over low heat.

  2. Let simmer uncovered for at least one hour, adding more water as needed. For safety, make sure to keep checking on your simmer pot to make sure there’s enough water in the pot so the ingredients don’t burn. Enjoy!!
